For all you chackbay fellas out there, i gotta question.

I was going to try it yesterday but i noticed the package was only 12oz or so and it said enough for a sack of crawfish.

Is 12oz really enough for one sack? I was skeptical so i backed off.

Somebody give me a specific chackbay recipe for one sack and i'll give it a try.

One bag is nowhere near enough. I’m not sure if 2-3 of those bags is enough to cook a full sack of crawfish where they are spicy enough. A bag or two thrown in with about 2 cups of liquid Zatarain crab boil and a container or two of salt is damn good.

So how about this.

2 bags chackbay, 2 cups liquid boil and one container of salt. 2 containers of salt sounds like alot. Is it as much as it sounds?

I use 1 pack of Chackbay, 1-2 boxes of salt and 12oz of liquid crab boil. Boil them they float, soak them till they sink.

Do you worry about over salting with 2 boxes?

Sure 1 container of salt is plenty especially if you have high blood pressure. Maybe split the difference and go 1.5 on the salt. Something is in that Chackbay though that taste good mixed with liquid Zatarains. I think It’s the Chinese red pepper they use instead of cayenne. Whatever it is I don’t care it brings a nice added flavor to the taste of the crawfish. If you are going to use 2 bags you might back that liquid down to 1-1/2 cups unless you like them with some extra heat. Give it a try I think you will like it.

I always use at least 1 box, a lot of times 1 1/2. If I'm boiling some crabs that are really full I use 2 boxes.

Chackbay doesn't have the salt like others.

It all depends on your pot size though.

For my 160 qt, I'll use 3 boxes of salt.

My 90 quart pot needs two cylinder boxes of salt on the first bag.

You made a good point there. That’s why I like to use Chackbay with liquid Zatarains because I can control the salt. Man I hate eating crawfish that make me thirsty for 3 days. I think I have a 100 quart pot and 1-1/2 cylinders of salt seems to be the proper amount for my personal liking. Damn you have a big pot you aren’t playing around.

Now when you say "one box". I assume you mean one cylinder of morton or the like? Sorry to be so anal about it all but if i do the chackbay, i just want to get it right.

So for maybe a 35lb sack:

2 bags of chackbay

1 cup to 1.5 cups liquid concentrate

1.5 cylinders of salt

That about right?

I would not go below 1.5 cups. Tried that once and they were good but mild. Stay in the 12 oz to 16oz/ 1.5 to 2 cup range.
