Beyond this, food trucks have 2 advantages over b&m: food is served right after cooking and costs are much lower so they can use better ingredients at a lower price point.

Food trucks are generally good because they have a limited menu and must execute that menu well in order to survive. If you serve 3 dishes and they suck you won’t be in business long.

Idk if it tastes better but it was a good way for good food to get off the ground.

Food trucks usually don't have freezers. They buy produce/meats fresh, so that helps. When they run out of food, they close. As someone else mentioned, you're standing right there as the food is plated, so it's fresh.
In Portland, it is illegal to park a food truck on public property. The food trucks park on private lots and stay there. These pods are like permanent outdoor food courts. They don't move around for your convenience, so you have to go to them. They have to be good enough to attract customers.
