First time cooking pork belly

Picked up a pork belly at Costco for $2.75lb. It turned out really well and seemed to have a lot less waste as compared to a butt.
I smoked it for 3hrs uncovered at about 170 degrees. Then another hour uncovered at 235. The internal reached 162 and I wrapped it and cooked for about 3 more hours. When it reached 198 I pulled it off the heat to rest. After an hour covered in towels I unwrapped it and brushed on some sauce and put it back on at about 400 for 20 minutes to firm up the bark.

When the internal temp hit 165 I sliced off a strip about 1" thick. It would melt in your mouth. I think next time I am going to cook to 165 and then just slice it.

I hope Costco keeps carrying them. I will do these instead of butts from now on. Didn't have the globs of unrendered fat that you get with Boston Butts. Seemed like a lot less waste.

It was really easy all I did was rub it down with NuNu's seasoning on the start and added some homemade apple vinegar based sauce in the wrap with foil.

Looks awesome. Aside from whole hog, that's the only thing I've haven't attempted yet (as far as traditional smoking goes). But I definitely will...especially after seeing yours. Helluva job.

We did one last week. I found an oven roasting recipe so we tried it that way.
Rubbed it down with a basic pork rub and let it sit for an hour in the fridge.
Put it on a rack in a roasting pan, fat side up, so that it wasn't swimming in its own fat.
Threw it in the oven at 500 for about 10 minutes to crisp up the fat a bit.
Dropped the temp to 375 for an hour then added a beer to the bottom of the pan.
Cooked it for another 90 minutes at 375 then pulled it out.
We sliced about half of it and pulled the other. I loved it both ways. I also poured off the drippings and made a great dipping sauce with it.
After looking at yours, we will give smoking it a go next time.
