I've seen them at Lamendola's in G-Town.

You know they will need the beef broth and red wine to develop the flavor.
You don't need +$20.00 a bottle red wine either. It is not an Oenophile drinking experience you are after, but the half bottle of wine fortifies the broth in a very pleasing way. A red like I used (maybe $10-$15 range) is fine. If you have any in your house already, it will be fine, but you do need the red wine.
I'm not sure you can add too many sautéed onions either.

Thanks for the tips. I never use expensive wine for cooking. JusT wine I like the taste of.

I have just tried this recipe but with soup bones and veal round steak. Will let you know how it comes out. I did add a step as advised by another poster. I added a few potatoes for the simmer. Towards the end i removed the meat, bones and bay leafs. I then used the immersion blender to blend the carrots, celery, and potatoes. I then added back the meat and more veggies/potatoes and simmered for another 45 min.
