Having another of the same for 2BD. The kitchen is slow or maybe I was slow to order. I hate it when that happens.

I've never done that either. Chicken and sausage gumbo? I can see it working well with that. Seafood gumbo not so much

I saw a thread on the F&DB a couple of months ago started by someone who wanted to try something different with their C&S gumbo. Bacon grease was mentioned by a couple of posters with positive support so I thought I'd try it.
Also, I believe the 19.2oz can is a perfect size for stirring the roux.

I've got chicken gumbo in the freezer waiting on some "light the fireplace weather", but using bacon grease for the roux is interesting - Rouse's has whole chickens for 99 cents/lb so I picked up a 5 lb bird and I'm roasting it to serve along with some mashed potatoes and lima beans - kind a of a quiet comfort food kind of Sunday
