Chicken and andouille. Turned out pretty good. Made the stock yesterday. I think I've finally got this gumbo thing down.

C and A is my "go to" gumbo too. I've pretty much perfected my cooking method. I use rotisserie chickens. Their carcasses and bones make a great, rich stock.

We eat rotisserie chicken from Costco at least once a week. I need to make a gumbo. There are a couple of places up here that make a passable andouille.

I like eating the crispy skin off a freshly roasted chicken too much to use store rotisserie chickens

It would be easier. But we get a whole chicken with our farm co-op every week so I need to use them somehow.

Where are you getting that? It is a solid DIPA, but I don't think I've ever seen it in bottles around here.
