Going to do this on my next IPA batch.

FBD was a Bayou Teche Peach IPA with lunch. Pleasantly surprised.

SBD was a MAF Dallas IPA

I did at Chimes East the other day. It was good, but no Great Raft AMT.

Sort of a joke. We always use some acid malt and CaSO4/CaCl2 in RO water to lower pH.

Considering there's no telling what Ghost was before and what it is now we don't know how low he was shooting for or how much different it was vs a previous batch.

In this batch we went back to the 4 oz acid malt along with about 4 grams of each salt. Had gone higher on the sulphates in the past but thought it was a little too much for our IPAs and Pale ales.


This beer is definitely not Cat Pissy. Just used Simcoe for bittering instead of columbus because we had it on hand. It's really one of the better batches IMO.

good to know. was considering making the trip into town but i think we'll stay out in the country. county seat is a new farm to table restaurant that opened out at livingston and has a decent beer selection. looks like where we'll head.
