Pretty much this. I just made one with some leftover Mexican pork.

I think my favorite might be roast with gravy.

Classic western

Red bell pepper and pepper jack cheese

Refried beans, jalapeño, jack cheese, diced grilled chicken

I love omelet’s the day after a crawfish boil. Leftover boiled mushrooms, sausage, and crawfish (if there are any left) with cheddar and American cheese. I also like sautéed spinach, cherry tomatoes & mushrooms with ricotta.

Can’t go wrong with ham & cheese also.

If I only had to choose one filling, it would be cheese. I love a Western omelet, with or without mushrooms. Potatoes and bacon are for sides, not fillings.

One time i made a simple cheese omelette and covered it with leftover spaghetti sauce

My favorite is a cheese omelet on O'Brien potatoes covered with picadillo, have also covered them with leftover Manwich.

Just make sure you put fresh chopped green onion tops on it, they make eggs better

I pulled the meat off leftover buffalo wings and chopped up leftover parmesan cheese fries and put them in omelets a few weeks ago. It took the family a few minutes to figure out the mystery ingredients. Good stuff.
