Favorite Omelet Filling?

A quick a favorite breakfast for my household are omelets. I usually fry up a quick one and fill it with goat cheese & roasted mushrooms sometimes.

What are some good combinations to put in an omelet?

Leftovers from previous dinner and add cheese: Meatballs, shredded chicken, steak, potatoes, spinach and feta, sautéed onions, mushrooms

Usually sausage, ham, a bit of bacon, loads of cheese, and a tiny bit of onion.

A few chunks of roasted potatoes/hash browns are also appreciated.

I once sliced up a leftover pork loin very thin for an omelette and found it to be surprisingly good.

I usually do the Jacques Pepin rolled omelets. Sprinkle fines herbs just before rolling and add some goat cheese as the only filling. Sometimes no filling.

I always get laughed at for pulling Popeye's chicken from the night before and tossing it into my eggs. It's a modern day conundrum, what came first?

I always have to have onion and cheese in any omelette, and hot sauce.
