Favorite healthy meals for dinner

Something generally lower in calories, sodium, and processed crap.
Carbs are still healthy, but lets avoid pasta dishes and bread. Im looking for some ideas from you wonderful people.
Grilled/baked chicken salad with onion, bellpeppers, toasted almonds, wee bit of parm, avocado, carrots, and some sort if vinegar based dressed. (I do a homemade balsamic vinaigrette with honey, balsamic vinegar, light soy, creole mustard, fresh cracked pepper, greek yogurt, and a little bit of olive oil that gets the job done)
My #2 dish is making a slow cooked tomato sauce and covering baked spaghetti squash with fresh green beans or brocolli.
#3 is some type of fish (usually salmon) with a vegetable and salad.

Are eggs on your healthy list? They’re on mine, and we frequently eat eggs for dinner. A skillet full of marinara, or shakshuka sauce, with a few eggs cracked into it. Cover with a lid and simmer for 10 mins or so until the eggs are as done as you’d like.
Or egg salad, on a lettuce leaf instead of bread.
Also, oil packed tuna in a vinaigrette with capers, dill, and Dijon mustard.

Grilled fancy beer, my fav.
On a more serious note, I really like the HEB Meal Simple pesto salmon and bake my own asparagus to go with it. Could eat once / day if I had to. Also like ground turkey which I season with cayenne and taco seasoning with the HEB cilantro lime salad kit, which I've done pretty frequently since teleworking over the last six weeks.

a simple yet delicious meal is putting some chicken breasts in the slow cooker, add a small jar of salsa, a can or two of black beans, and some fiesta type seasoning (salt/pepper/paprika/cumin/chili powder/garlic and onion powder).
put some cheese on the chicken the last minute to melt, remove and eat with sour cream. Easy on the cheese and sour cream if you want to reduced calories.
Easy and delicious.

We have been having a salad with field greens, Strawberry ( or blueberries), goat cheese, candied pecans and cranberries . with a simple vinaigrette - Olive oil, Balsamic vinegar and agave . The balsamic and agave make a nice contrast along with the goat cheese and cranberries. Some days shrimp , some days chicken.
The family has enjoyed fajitas more than I anticipated.

seared tuna over rice or cauliflower rice. if cauliflower rice, I like to get a nice crisp on it from the cast iron. chop some bell peppers to mix in, then drizzle with some sriracha mayo and top with green onions and sesame seeds...looks something like the below

Grilled or roasted pork tenderloin is a great option for lower fat protein . Been making a lot of stir fry with whatever vegetables look best. Costco carries a quinoa /brown rice mix that is great with grilled peppers. Usually grill a batch of marinated boneless chicken thighs weekly , lots of options with that.

^^ that, except rotisserie chicken from Costco and a bagged kale slaw kit from Costco or Trader Joe’s. I like the kale slaw blends b/c the cruciferious shredded veg is still decent for next-day leftovers, while dressed salad becomes a wet mess.

FWIW I get that Costco rotisserie chicken and make my own stock from the carcass for gumbo. Costco sells a chicken andouille sausage as well. I use brown rice and make my roux with whole wheat flour. Comes out pretty damn tasty.
