You will, I promise you. But you don't yet. I've found it at grocery stores all over Lafayette and know that Sams carry's it there as well. If it is not here, it is only a matter of time.

I use Rabideaux's or Kartchners exclusively if I can get it but have no idea why Manda's has the reputation it does on here. It's better than the French Settlement for sure. Sausage is close to bacon for me meaning some are better than others for sure, but they are all good. French Settlement sucked, Richard's was head and shoulders better as would Manda's.

Completely un-level playing field relative to the others being discussed.

FTR, I've seen some types of Rabideauxs in Krogers in Sulphur and a Rouses in Laffy.

As for the rest, NO Smoked Sausage (Hogs for the Cause) and Tony Chachere's.

MaBell is definitely greasy. I prefer Fernwood Grocery to MaBell. Plus, it doesn’t give me indigestion as bad.

I'm guessing it's because of the Tony's brand, since it's popular to hate on Tony's. It's not anything absurdly good, but it was definitely better than I was expecting and is my 2nd choice for the mass-produced sausage if the Hogs brand isn't available.

I’ve got to tell one on myself. Earlier today I was cooking a dish that requires smoked sausage. Not knowing the Mississippi brands, I thought I couldn’t go working with a Louisiana brand like Zataran’s. When I got home and was browning the sausage, I tasted a piece and it tasted like shite. I started reading the sausage package and to my surprise, Zatarain’s is headquartered in Phoenix, Arizona. I promptly dumped the whole skillet in the trash and proceeded to use some deer sausage that I had in the freezer.

At one time, you would be right. They are very inconsistent now. One pack will be fine and the next will be greasy and give you bad heartburn. Rabideaux's is better for RB&R now.

I like Savoies hot, and the Verons short fat andouille link if I don’t have small batch meat market stuff in my freezer.

Tried the Hogs for the Cause stuff and didn’t like it: excessively greasy, and a taste I didn’t particularly care for.

Mass produced? Richard's.

Grocery store sausage? Anything from bourques.

If I'm anywhere in the country that doesn't sell something of that nature, I just look for the least processed looking sausage. That will typically be the best. I made some damn fine gumbo and jambalaya in Michigan because they have quality German Smoked Meats.

Anywhere that has an appreciation for pork and smoke can make a good sausage.
