A properly seasoned carne asada skirt steak is my idea of heaven. Bone in ribeye with just heavy salt and some butter garlic is a very close second.

I bought some today for the first time and didn't realize until I got home that they are blade tenderized. WTF? Why do that to prime meat when they say you need to cook to 160 internal to make sure it's safe to eat?

Do you cook then to rare or medium rare?
