We had Shrimp and grits for dinner tonight with Fried Grits. It was my first go with fried grits, and so worth it.

Shrimp and Grits is an East Coat thing. That shite didnt pop up in SOLA till about 15-20 years ago.

I can do it all. Sauce piquante, gumbo, jambalaya, brown gravy, crawfish, whatever.

I love grit cakes. Probably not a Cajun thing, but darn good.

I grew up on grits cakes, but we didn’t call them that. They were just fried leftover grits....my memere and daddy would pour leftover grits into a loaf pan and refrigerate. When the grits have set up firm, you can slice them and reheat with a quick sizzle in a skillet. Usually it was in a little leftover bacon or sausage dripping, but butter works well too. Makes a nice change from toast or soupy grits on your breakfast plate.

I’m craving couscous. I have a black iron skillet that I use just for couscous that I made eye contact with yesterday and now can’t get it out my head. My in-laws use coffee milk on theirs. I may have to try that.

My dad used to eat his like that too until he almost choked to death. No more couscous for him.

I stay at Ashford place apartments. Not the ideal place to boil but I can make it work.

Man I'm transplanted here through a failed marriage. I don't know anyone here so meeting someone in the area is fine with me. Even if it takes me boiling some bugs.
