Ever put gator in jambalaya?

I don't cook, but I've eaten gator tail jam.

Gator tail is always good. The meat is perfect with for jambalaya imho due to the amount of fat content and the way it's disbursed throughout the meat. I'd say just remember to start marinating it a little earlier than you normally would with the traditional meats you use when prepping.

It'll dry out. It would be like using pork loin.

Several times. But I've also venison sausage, rabbits, squirrels and doves.


Cannot confirm. But rumor has it that robbins go well in a jambalaya.

I have cleaned and cooked hundreds of pounds of that vile creature. The fat starts to stink immediately. Even the well trimmed meat sucks. It's a reptile people. Iguana is gross. Snake is nasty. Gator is passable if I was starving, but to willingly chose it as a protein source makes zero sense.
