Eggs in gumbo...WTH?

One of the entries in a cook-off we had Sunday was a chicken & sausage gumbo that had chopped egg whites from hard-boiled eggs. Anyone ever seen this? It didn't greatly alter the taste of the gumbo, but I found it quite odd.

P.S. Now I'm wondering what the gal did with the yolks.

I put whole boiled eggs in mine all the time. Depends on who i'm cooking it for. Personally I love a boiled egg in my bowl of gumbo. Kinda like having potato salad in it. Same basic taste.

I've cooked gumbo many a time with whole boiled eggs added to it...extra,cheap protien...it's a Cajun Prairie specialty.

i do this every time i have gumbo (at least when i cook it myself). i use the yolk as well though. and freshly chopped green onions.

That's the thing. I've seen whole eggs in gumbo before, but I've never seen anyone remove the yolk and dice the whites. I just thought it was kinda odd.

BUT....It's a GUMBO...so regardless, whatever you put in a GUMBO, makes it a GUMBO.

I know eggs/egg whites are used to "top" turtle soup. If it is used as a topping...I think it is a good idea.

The whole idea back in the day was to make a pot of gumbo go a long way for a large family. Adding eggs was a cheap way to make a pot of gumbo fill everyones belly.

She didn't top it with diced egg whites, she put it in the gumbo with the chicken and sausage. I'm not saying it was a bad thing to do, just that I'd never seen it before and found it odd. Like I said, I've seen whole boiled eggs in gumbo before but never seen diced whites cooked in with the meat. It didn't taste bad or anything, just not something I've seen before.

Just doesn't sound like that would be good in seafood gumbo. I've taken my grandma's recipe (large crab,shrimp, sausage)

My mother could cook some the best shrimp stew you
ever tasted and she would put boiled eggs in it.
She was of French heritage but never put eggs in
gumbo.

I have seen people bastardize gumbo in many way, potato salad, eggs, mushrooms, wild rice, handfuls of crumbled crackers, even grated cheese, great, dump all the shite you want to, but not to my gumbo. That's like giving someone a painting and they start writing on it with a marks-a-lot.

Please forgive my ignorance, but how is this done?

Are whole uncooked eggs added in their shell to the gumbo during the cooking process to boil them? Or do you boil them first and then peel and add the egg...and when?

I've heard of this, but don't know the process. I prefer a simple gumbo...chicken and sausage...but would be willing to try anything once.
