Alton Brown has a pretty good recipe. I tried it a couple times, comes out pretty good.

I dry aged two deer last year. It wasn’t that hard.

Last year when it was really cold around Christmas/ New Years, I made a hunt around Vicksburg. The landowner had killed a deer and it had been hanging in the open barn, between two hill, so no sun hit the barn for about 2 weeks. We cut the back straps and grilled hot to medium rare, the flavor was incredible...

CAD turned ribeyes into black meat in his fridge and took a picture of it with his hook toe showing. He is your best source.

Hanging a deer foa week or two makes a huge difference.

I’ve done it a few times and the results are great but plan on a 30% or more loss of initial weight.
