Dirty Rice tips

Cooking a dirty rice for Christmas. I have Savoie's dressing mix and some ground pork. Any useful advice?

Brown your ground pork, when it's almost done add a tub of Guidry's seasoning mix, sauté until veggies are translucent, add the tub of Savoie's, bring to a boil and simmer for ~20 minutes. I usually add a cup of chicken broth give or take because I like it kind of wet (yeah, that's what she said). Stir in your cooked rice. Generally no extra seasoning needed.

I like to add about 2 tablespoons of dark roux to mine just as I finish browning the meat in the veggies and mix. Then enough stock to let it incorporate and simmer for a while before adding rice.

And for Goodness sake call it rice dressing not dirty rice. You sound like your from Texas or something.

Sure. Just be sure to adjust quantities of liquid to keep the ratio right. You don't want to add so much roux that it over powers it but enough to give it a small amount of flavor. Its much easier to add the roux in small quantities than add to much and try to repair the damage.

Lived in LA most of life and never, ever heard dirty rice called rice dressing. Must be a NOLA thing, sounds like "Yat" talk.

Add some chicken livers (if you don't have any, see if someone is cooking a Turkey that is throwing them away). You don't need a lot and they make it tast the way it is suppose to

This is correct. People always forget to add the "Dirty" part.

Use chicken or beef stock instead of water.

I like to add sliced mushrooms just to add something different.

A few chicken livers finely diced gives it a good flavor.

They call it dirty rice in the city. Growing up on the bayou it was always called rice dressing.

Chop up some green eggplant if you can find it. If not, purple works too. Just peel be skin off. Cook it with your veggies until it pretty much disintegrates.

It sounds weird but it is awesome.
