I dice up a pound or two of hogs head cheese and add it at the end. It melts in and adds a ton of flavor.

Rice dressing = beef/pork mix

Dirty Rice = has livers in it...hints the word 'Dirty'

I do exactly this except I cook my rice in it like a jambalaya. It comes out more even and flavorful I find. Some leftover from lunch.
