Dirty Rice recipe...

sure, i can perform a search, but why when I can just ask?

thinking of doing dirty rice for this year's thanksgiving potluck. Have seen the Isaac Toups dirty rice recipe from Toups Meatery and it looks amazingly simple and delicious.

has anyone else tried it? I was thinking of following the recipe and adding chopped jalapenos, for a kick.

Most won't admit it, but sometimes cooking from scratch just doesn't yield as great a result.

Mix in some shells and cheese on your plate and take it to the bank.

Not sure if available where you are at, but bayou Magic makes a dry dirty rice mix that's pretty damn good. ofcourse you add the meat and a couple of other things

Just me, but I never saw a dirty rice recipe with roux.

Don't some people use liver in their dirty rice ? seems like i remember my grandmother and mom doing this 30-40 yrs ago.

Yes- my wife uses liver and when she's not looking I use gizzards. Liver is the particular flavor most associate with dirty rice. At least I do.

Off subject, but I've put a small roux together for a large jambalaya a number of times...no color issue when you do that.

My family's had no roux and used livers and hearts. Wish I could find those not frozen.

I made this recipe last night with ground venison, I added some diced onion with the green onion. Turned out awesome.

I've never heard of a roux in dirty rice. It is hard to find livers, hearts and gizzards not frozen but they do freeze pretty good.

My wife makes a good dirty rice and I will make something my grandmother always made - smothered chicken hearts and gizzards cooked until they are tender and then I serve it over her dirty rice. I'm the only one that eats it - they think I've gone off the deep end on that one.

I love chicken hearts...... It's just another muscle like a thigh, same as the gizzard. Now livers have a much different taste.

Try Asian and Mexican grocery stores. A skewer loaded with chicken hearts cooked over a grill is a culinary delight.

I always thought if it didn't have chicken hearts or liver, it wasn't really dirty rice

Believe it or not, My foster mom in Bordelonville would sometimes use Owens Breakfast Sausage (WITHOUT sage) and made a damn good Dirty Rice... with the onions Bell Ps, etc.
