I'm a little confused. What is the actual difference between a shrimp stew and a shrimp gumbo? Seems like they are made virtually the same way....

Gumbo slightly thinner

I use tomatoes in my shrimp stews--never in my gumbos. I also use additional seasonings in my stews like bay leaves and thyme.

Tomatoes in shrimp stew nasty, not a real Cajun. stew uses about half the amount of water.

The continuum of thin to thick in Cajun cooking.....soup, gumbo, stew, étouffée, pie. Lol.

Thicker body in shrimp stew. Love it with hard boiled eggs in it.

Gumbo has okra and tomatoes in it.

Stew for me growing up meant less liquid. Almost like a rice and gravy dish. Gumbo more of a soup. No tomatoes in either.

This reminds me of a thread on the old Cooks Illustrated board. Some yankee wanted to know the difference between gumbo and étouffée, since the ingredients list on some recipes looked about the same.
No one could explain it to his satisfaction, and he ended up insulting half the board and pissing off everyone.

Gumbo is a "soup" with rice
Stew is a thick gravy
The difference between the 2 are really the amount of liquid and roux you put in it

As others said, the stew is more viscous. I usually throw stew my chicken on the bone, so there's that too.

Stew is rice and gravy made with a roux. Gumbo is a soup .

One goes in a bowl, one goes on a plate.
