That looks very excellent! Do you just use your phone for pictures? I need to learn how to take pictures better because they always come out so dark and make the food look bad (at least that's what I tell myself).

Sometimes I use our digital camera, and most of the time I use my phone because it is easier/quicker to use. Lighting is always important, and we have good undercounter LED lighting in our kitchen. That helps a lot. I also may take 6 shots of something I want to show and then throw 5 of them away, keeping what I think is the best. Digital allows you to be a sloppy photographer and get away with it.

I almost never shoot food photographs in a restaurant, and If I do, only one or two, never with a flash (at home or in a restaurant). If there is not sufficient light for an available light shot, I usually don't take one.

MD - I need to feed 6 people on Saturday and I would like to make this. How much should I increase the recipe and can I use a big cast iron pot for everything but boiling the PENNE pasta?

What I showed, used half of a 1 pound package of pasta and would have easily fed 4 people. The one pound (normal package would feed 8 with no problems. I probably would just double everything and count on having 8 servings. Doing one and a half times what I used would give you six servings. Especially with a salad, it would serve all of your guests.

I didn't say it, but it needs some warm, crusty buttered French bread. But everything goes better with warm buttered bread.

It will cook just fine in your pot.

You know what? I think the next time I will cook this with a roasted chicken from Sam's or the grocery store. Using roasted chicken will make the dish even easier. You might consider trying that and letting us know. I think the flavor of roasted chicken would go well with this dish and one roasted chicken is more then you will need, but I would use all of it. Would just be better.

I missed your update. But, I made this dish to feed 10 tonight, because I knew the 5 boys would eat a lot, and they did. It was a phenomenal hit! It was so good, exceptional. I don't cook for friends often, and never a dish I have never made and it was a home run. I am so excited that it was so awesome!!! Thanks MD!
