Northern Italian uses butter, not sure what MD's recipe falls under. But, I would eat it.

There was enough bacon fat and butter to cook the dish. Added no other fat to the dish. You can use it if you like.

To your credit, it's Penne Rigate. Which refers to the raised ridges or stripes that run the length of the noodle.

Here is the deal, or at least the best story I can come up with tonight.

I looked and looked for Rigatoni which is what I wanted, for the (I think heavier is the word I want to use) pasta texture, which I thought would satisfy my craving for a pasta dense dish. The trouble was I couldn't find any - anywhere, or at least at the Kroger stores I looked in.

Eventually (in the third Kroger) I found the brand I bought, which is a brand I had never purchased as a substitute with thick walls and what I figured would be a heavier pasta taste. Kept it in the cabinet for about a month and then used it today. My failure to find rigatoni zipped right my me.

The dish was excellent. I will definitely do it again. Maybe with rigatoni next time.

Funny thing is, I think we have a rigatoni fixture on the pasta attachment for our Kitchenaid mixer.

This kind of dish is and has been a go to quick weeknight meal for me since I started cooking and something my mom would make before that. Super easy and quick but always delicious. Only difference is I never add bacon to mine
