OP cornbread isnt far off what should be normal, sans an egg. Bacon grease in a hot skillet, egg, corn meal, flour, baking soda, baking powder, salt, & buttermilk = cornbread.

Is putting a glaze of honey over the cornbread a thing? I swear I had cornbread like that for lunch.

An old gent who was a state legislator in the 50s told us a story about his visit to Gov. Earl Long's home in Winnfield, called the “Pea Patch”, for a lunch meeting.

He described what they ate, which included peas and cornbread. He paused in the telling to note, "That was some good cornbread."

I don't know what Eearl's recipe was, but it was good enough to be recalled fondly even 50 years later.

I saw a recipe that suggested serving bourbon honey butter on the side to spread on top of the cornbread. Pretty tempted to try it

Our downvoter either has alters he uses, or three friends. I often notice if I get( or Otis gets)a single downvote, then three others will come soon after.

I notice the cornmeal is also self rising corn meal mix. Think that makes a big difference as opposed to using regular corn meal?

Self Rising Flour and self rising Cornmeal Mix both have baking powder and baking soda added already.

My rule is for a two cup recipe using AP flour and straight corn meal, I would add 2 teaspoons Baking Soda and 1 teaspoon Salt and Buttermilk (which activates the Soda).

1 teaspoon soda and 1/2 teaspoon salt per cup of AP flour and straight cornmeal.

We occasionally use stone ground cornmeal, and when we do, the above ratio is what we add - plus buttermilk - always buttermilk. Can't make cornbread without buttermilk.

My wife made it one time without. She also didn't get the pan hot enough and the oil wasn't sizzling. It stuck to the pan and didn't taste quite right. I made a comment about this, and I think I've fully recovered now. Anyways, I make the cornbread at the house every time now.

Looks good but, IMO, cornbread does not contain flour - only cornmeal/corn flour.
