Crock pot suggestions?

Doesn't have to be restricted to the crock pot really. Just looking for something I can spend a Saturday or Sunday cooking.
Also something that works well for leftovers. But something other than spaghetti, red beans and rice or jambalaya, chili or gumbo. Simply because I've already thought of those. Though something you might put on rice or pasta would be cool.
I am pretty much a beginner so just ideas are fine, but if you have a recipe, that would be great too.
Just out of ideas at the moment and a couple of glasses of wine into the night, so I figured I would come here.

I cook a lot of curries in my crockpot. They're pretty simple (chicken, coconut milk, assorted veggies and seasonings) and they're good. Plus you can get several meals out of one crockpot.

Another crock pot staple I do is little cheap arse round steaks, with whatever veggies I have (carrots, potatoes, onions, mushrooms, etc) and red wine/beef broth.

Take some chicken breasts. Wrap them in bacon. Slow cook them in mushroom soup all day. Season as you please. Goes well served over rice.

Well I'd so a big chuck roast in a nice gravy. Thicken towards the end and serve over rice or grits.

Thanks for the recommendations/suggestions.
I probably should have added that I would like to use recipes that include beer. For a lazy saturday where I use one bottle for cooking and the rest to drink while cooking.
I did some googling and found some interesting recipes that I might try. Mostly stews like
Hungarian sausage and ale stew
And
beer pot roast
Which had some other ideas listed at the bottom.
Decision, decisions...

Didn't you just get a really good dutch oven?
Oh, nm I thought you were looking on a buying suggestion.
You could always do some beef shanks...
I don't see any reason you couldn't do pho in a crock pot. Get some beef knuckle and some oxtails and throw it in the pot with some water, charred ginger and onion, cinnamon stick, star anise (but don't leave the anise in the whole time)
