Crispy Roasted Brussels Sprouts from Zea

Had these today for the first time. They're pretty good.
There are lots of recipes online, but the accompanying pictures don't look as charred. Anybody know the secret? Is it just cooking longer? And what about the Asian sauce that goes on them?

Otherwise, most dishes like this are done by frying the sprouts. Be careful if you do this - lots of splatter.
You can roast them and get a similar result.
Sauce is usually just a vinegar sauce. White vinegar, minced garlic, sugar, red pepper flakes.. cook on low heat until the sugar dissolves. Toss sprouts.
I actually just use straight up white vinegar now and skip all the sugar.

I use a mix of olive oil, thia chili sauce and fish sauce (or soy) all at 2 tbl each and a tsp of minced garlic. I toss bp in olive oil and roast fro 20 min @ 400. Add 1/2 of mix and toss and roast another 20 min. Add other half of mix and roast/toast on broil until you see carmelization....about 5 minutes.

Just roast them longer til they start getting charred. I prefer mine charred when I make them at home, so I take out everyone else’s and put mine back in for 5-10 more mins

Roast them until cooked.
Broil until crispy.

Ill get some hate for this, but I attended BJ’s the other day with friends and tried their honey/sriracha brussel sprouts that left me pretty damn satisfied.

They are prob flash fried then drenched in some type of glaze or oil

I don't have any secrets but I cut mine in half. Oven at 400-425 and I use more olive oil than most recipes call for. Flip them halfway/shake pan around. Outside always crispy.
