Crispy Fried Catfish

Late yesterday afternoon after it cooled down to a nice 93 degrees in the shade I did a little frying outside in the little T-Fal fryer. I had cut some catfish fillets into nuggets and set in the fridge in a yellow mustard bath and when ready to cook I battered them just before frying the French fries. I also whipped up a little homemade cole slaw dressing for cole slaw.

Time to make a plate. There used to be someone who hated my stainless condiment cups so for them I decided to use one for some ketchup. Lol.....

I made some fried catfish last week and experimented with this.
It turned out great.

Panko is God's gift to fried foods. I like chicken tenders dusted with corn starch, egg washed, then pressed into panko and fried. Oysters are awesome this way too. Thin pork cutlets are great this way too, a classic Japanese Tonkatsu.

I'm gonna try that next week. I'd try it tomorrow but my stove hood is broken and the new one can't be installed for 4 days because of the July 4 extended weekend.

How do you like that T fal fryer? I've been considering getting one. I usually fry everything in a black iron pot, but this seems so much easier.

A wok is a perfect fry vessel. I especially love them for whole fish.

I have to say we've had this for a good while and never really used it much. Not long ago I drained and cleaned my outdoor fryer and want to have something repaired so a couple of weeks ago I took the T-Fal out and filled it with oil and have used it every week for the last month.
Woks are great for frying and I bet an electric wok would be hard to beat. This one heats up quick and keeps the temperature at any of four temperatures to choose from. 320-374 degrees. This is the Emeril version and if you get one get one bigger than you think you need. Food fries better when not crowded. Yes, I do really like this fryer.
