I think what happens is that folks try to make it out to be a rocket science type thing. The more I do, the more it seems like I am doing something more special. So who tosses butter in the pot?

Just to clarify a little, we do season our water. Our boils go like this.... if you want mild eat one of the first batches and if you want hotter eat at the end. We season our water and we season some in the chest. Season is added after every batch, thus the last batches tend to be more spicy. I don't try to coat the entire crawfish cause too much is not good. Like i said before i use swamp dust which seems to dissolve on the crawfish... Most other brands dont and stick to the outside and make it kinda grainy.... Again, to each his own
but no way one of you guys who say my method is stupid will eat a batch and say that you dont like it..... been boiling them for almost 20yrs like that and kind of got it down right.

Everybody I know pours seasoning on them in the icechest. And yes they season the water too. They always taste great too.

I'm with ya Deaf...been boiling for 8 to 9 min and soaking for 15-20 for as long as I can remember...very easy to peel and tasty every time

Quote 1 is almost verbatim what I do. I let boil for 5. Then I add a bag of ice, or just water from the hose to cool down the pot just a bit and let soak for about 30. I'm sure these same people that "dust" the crawfish also purge with salt and add a little olive oil to the water so they peel better.

If Im using two pots and dont have to cook to many, I prefer the boil in seasoned pot then soak in warm pot that is heavily seasoned.
If doing a 100 or more pounds.. incorporating the steam/ice chest method can help on time but you have to layer the seasoning and put ice in between the layers.
With one pot I just use the ice method.
They come out a little different based on the method but I prefer the boil then soak in warm water.

My dad has been farming crawfish for as long as I can remember. He does the ice chest method. My father-in-law did the other way until he had my Dad's crawfish. He now does the ice chest method.
Having lived in Baton Rouge for 11 years for schoolin', I found that BR folks really, really, really try too hard at boiling crawfish. Its a fricking game the men play to see whose method can be more complicated.
I purge! Don't purge! blah, blah, blah.
I find the soaking method leaves a larger room for error for not much difference.

I've never been to a boil in the BR or Nola area and had enough spice. And almost always too mushy.
I personally need the ice chest seasoning/steaming for the extra pop. But I've also had the icechest method that was too spicy.

That means they are overcooked, not properly soaked. Don't confuse the two.

I've never once had "ice chest" crawfish that tasted good, and I am a strong proponent of the soak method. However, I would like to try some from one of the "I know what I'm doing with the seasoning on the outside" people.
