Crawfish Caterer in Houston

Looking for recommendations for someone to cook crawfish for a work event. About 100 people. I'd like someone that cooks them Louisiana style. Normally I do them myself but the event has gotten so big I end up cooking the whole time and don't get to enjoy myself.

Things I'm looking for:
- Water seasoned well
- Not over cooked
- Long soak
- Ideally seasons with more than just powder (ex fresh garlic, lemons, onions, etc)
- No dumping Tony's all over the outside

This may seem obvious to most but those that have had Texas crawfish know what I'm talking about.

Yes I know what you are talking about and I know a guy who does a great job. He also mixes his own spices. Let me see if I can get his info for you.

Also when is the event?

Call La Crawfish Express in Pearland they do good work.

Don't have a date yet. Still in the early planning. Probably late March - early April

Crawfish Connection caters the sports bar I go to on Sundays. Very good and consistent every time. Everything is on a trailer so they just pull in and start cooking.

My brother-in-law's brother has also bought some fancy rig to begin catering in the area. I don't know if his set up is adequate for 100 people though. I'll ask.

They have what I think is a Lafayette and Humble phone numbers on the trailer.

I think la Crawfish express is owned by a buddy of mine (his brother is married to my cousin in plaquemine) and they know what they are doing. Ask for Matt if he is around. Definitely the LA way if cooking the bugs.

Lot of these type connections in this thread.

And from experience these type rarely work. Every time I hook up someone with that type I'm the one that gets jammed because they typically disappoint.

Seafood on the Geaux in Katy will do it the right way and will cut you the best deal. Give them a call

Yep, honestly I would not use the BIL-B right now. He just got the equipment so he is fairly new at mass producing crawfish. It may be great but until I tried it myself I would have to go with the guys who cater the sports bar.

Do they do it at their location or your's? Was thinking of doing something like this for wife's 40th at the end of April.

Make sure you emphasize well seasoned water. It's the reason good crawfish are good.

They will do it anywhere in the Houston area. I'm good friends with the owner, send him an email and I will let him know to take good care of you.

I just started doing some backyard catering bbq, fish frys and crawfish boils last year and can accomodate up to about 200 people now. I have won many awards cooking competetively in cookoffs around both Louisiana and Texas in BBQ, Gumbo, Wild Game and more.
