My wife and I always ask to sit in the Garden Room but the Parlor is probably the nicest.

Garden room is nice, but I doubt they would open it up just for y'all. Wine cellar is nice and secluded. It's a bit chilly in there, but you may be able to get them to set you up in there. Any of the other dining rooms, and you will have people around you. But, solid choice. The food is always on point!

Chef's table could be interesting.

I like the Garden Room upstairs.

Downstairs is nice. The Patio Room is nice.

The only place I don't like is the middle room upstairs by the bathrooms.

Chef's table needed to be booked about 9-12 months ago.

You are thinking of the Patio Room, out back across the courtyard. The upstairs Garden Room is always open.

My favorite place to sit is the Garden Room, as close to the windows as possible. The Patio Room, if open, is not romantic IMO.

People have recommended the Chef’s Table. I have done that twice and it is a great experience but maybe not for what you are looking for. The food is fantastic and the atmosphere is fun but it is certainly not romantic. You are in the hustle and bustle of the kitchen And it is for four people. If you have fewer than four they still charge you for four.

YMMV, but I’ve never thought of Commanders as a very romantic restaurant. Vibrant and fun, sure. But it’s so busy and such a scene. But the real answer to your question is to go for a fun lunch and sit upstairs in the Garden Room.
