Use the manual button until you’re hitting 38g and adjust your grind size until you’re at about 30 seconds. When you get your new portafilter, you’re going to have to dial it in again. If you are still really sour, shoot for a bigger shot 1:2.5 ratio.

Another question for the Legato owners. How many bars are your machines showing for your best pulls? All mine have been around 4 bars topping out at 5, but from what I understand I should be expecting 8-9.

Grind finer.
You can also adjust the flow rate with the screw next to the grouphead, though I haven’t pulled a good shot since messing with mine. Might put it back.

Whole beans should stay fresh for a while. They don’t hang around our house very long…and we really never know the date of roasting. We buy Community Breakfast blend whole beans and they’re on point when we grind them directly into the filter.

How fast are you pulling the shot? If it’s like 20 seconds then you need to grind finer like Jordan said. If it’s taking 30 seconds and still not hitting 8/9 bars, you need to adjust the water flow which is that screw above the pressure gauge.

Leave in the bag and make sure to keep it closed tight or any air tight container. I have an Airscape container.

If anyone is on the fence, buy the espresso machine asap. It's the best purchase I have made in years. It's an absolute game changer. I've done drip, cold brew, french press, etc, and the espresso machine is by far the best coffee maker. It pays for itself because you won't want coffee from anywhere else.

As promised earlier in the thread, I requested a Niche Zero for my birthday, so here I am, much older, and finally pursuing good coffee.

That the oxo 9 cup? How do you like it? Almost got the 8 cup (via bundle with the grinder) but ended up doing Cuisinart instead

I've had it a few years, I guess it's a 9 cup, although the numbers on it go up to 10??
I like it okay, no real issues. My palette isn't good enough to offer any other real opinion about a coffee machine.

Can anyone offer some advice on grind size and ratio for standard filtered coffee?
I know Hoffman seems to say start at 60g/liter. I tried that, and that seems like a crazy lot of coffee, but I did grind it too fine to start. Been varying down from there, but open to suggestions. Then again maybe the med-dark roast is just somewhat tangy?

We have the 10 cup, it's great. It definitely makes a better cup than whatever we had before that, I think it was Cuisinart but old. We got tired of breaking and replacing the glass carafe. The process the oxo uses is similar to the automated pour over machines I've seen at some places.
