I will also throw in that the hams he was sourcing, I believe, were different from the hams that he was serving for sandwiches. The sourced hams were country hams that were sold as whole hams, but they did still cook/smoke them at the restaurant.

For price and wait and limited menu, it didn't do much for me. I probably need to give it another try though.

That is great news. Their bacon cookies were a huge hit at the Our Lady of Mercy Church Fair and they got tons of free advertising right around the corner from their new location. I think they will have great success in that area. I hope they expand their menu slightly as well.

I'm not really interested in reading thread through and through but my understanding is that city pork is no longer making any thing in house?

Man that's sad. If that's true, I wouldn't say it's what market demanded, but what the market was willing to support.

I suppose there's often a fine line between the two and that oftentimes focusing on the latter to the exclusion of focusing g on your craft and being content with the former for a time, can be short sighted.
