Cinco de Mayo - Cooked Mexican food on Sunday (pics)

On Sunday I tacked a Mexican meal. I made guacamole, salsa fresca, surf & turf tacos and refried black beans. If course, I also made margaritas.
Guacamole prepped

I can understand that. I like a sprinkle of cheese on them. They're self serve so you can build yours to taste.

Sure can.
28 oz can peeled tomatoes (I use Roma)
1 medium onion chopped (I use sweet onions)
Puree tomatoes and onions in food processor then put two cups of the mixture in a saucepan. Add 2 cups chicken stock, 1 1/2 teaspoons kosher salt and 1/2 teaspoon ground cumin and bring to a boil
Heat 1/3 cup cooking oil over medium heat. When oil sizzles add 2 cups long grain white rice. Toast the rice until browned (5-8 minutes depending on the heat) and add a couple of chili peppers seeded and minced. Saute until chili peppers soften and add 4-5 pressed garlic cloves. Give it another 30 seconds or so and add the boiling stock. Reduce the heat, cover and cook the stock down (about 15 minutes but may take more) until the stock is gone and the rice is done.
Juice 2 limes and chop 1/4 cup cilantro and add. Gently stir this in and the dish is finished.

The lobster looks good. The steak needs a lot more browning for my tastes.

I agree about the browning on the steak. I was trying to get too many things together at once. It was still very good but was the weak link.

Let me know how you like it. It has a ton of flavor compared to the rice I generally get in a Mexican restaurant. I was afraid I was burning the rice when toasting but it was fine. That hard crust on the rice keeps it from getting mushy when it cooks in the stock.
