Wow. Lots of input for my first chili cookoff. Any other suggestions or ideas would be appreciated.
This one is in Mobile, being put on by the USA Med school students. Its a gumbo/chili cookoff, and for a good cause so anyone in the area should come out.

I don't like kidney beans in chili, but I love black beans.

It is. For texture, I make a little corn meal (or you could use corn flour)slurry with some water or stock to tighten up the dish.I don't care for a chili that is too thin.

Best chilli I've had had half red beans & half black beans. I could see pureeing a mix of red and black beans.
