Chicken Wing Method

Who has a good cooking method for chicken wings? I already have the sauce to toss them in, just want some opinions on type of wing to use or brand and cooking method. I want to do lightly breaded but not too much breading.

Only way is fry really.
I don't like mine with breading so I boil and broil. That's the best method.

I marinate wingettes in Franks hot sauce for several hours -> toss once in plain flour (no seasoning)for a light coating -> then fry at 350 F for 5-7 minuts depending on the size of the wing -> Toss in sauce of choice (asian for me lately).
Other method is slow grill with indirect heat (also at 350F), then toss on direct heat for the last 2 minutes. Toss in sauce.
I do one of those methods 2-3 a month usually.

I season them with Cajun spice then shake them in a bag of white rice flour, then deep fry them at 350. The white rice flour makes a light and crunchy coating. Then toss them in the sauce of your choice.

Boil for 15 mins.
Broil in over on high for 20 mins.
Take out, shake in whatever sauce you like.
Change your life.. I'm telling you.
By far best wings I've ever eaten or cooked.
Plus not as bad for you.

Season about 2 cups flour with your favorite cajun seasoning. Coat the dry wings in the flour on all sides. Move them into the fridge for about 1 hr. Discard that flour. Remove the wings from the fridge and coat them in new seasoned flour.
Fry at 330-350F for 10-12 minutes. Drain on a wire rack, then toss into your wing sauce.
1 part Louisiana hot sauce plus 1 part real butter is a good place to start.
I use Franks Red Hot with unsalted butter. I add a couple shakes of Tabasco when I want to heat em up.

I cut the tips off and split them in 2.
Dump 1 bottle if LA Hot Sauce in agagallon zip lock bag along with the wings. Let them soak from 20-40 mins. Take them out, sprinkle with Tonys or plain ole season all and fry them for 8 minutes.

Zip loc bag - lea and perrins and emeril essence seasoning toss and marinate 1hour. Grill then toss in your favorite wing sauce!

Grilled wings are very good. It's the way I do them, if people want them nekkid.

That's how I do it. Rave reviews always.
1.) Toss raw drumettes and wings in olive oil.
2.) Salt, Pepper and Adobo seasoning.
3.) Grill to crispy.
4.) Toss in large bowl with homemade sauce (sweet cram butter, hot sauce, little bbq sauce to thicken. Simple and good.

My favorite:
Marinate in Tiger Sauce and a touch or two of garlic powder for a few hours, then place on the smoke for 2-2.5 hours, usually try to keep it around 215-225 degrees. Flip about half through, basting after the flip and occasionally with a mix of Tiger Sauce and a tablespoon or so of melted butter

Best way is to fry them at 375° for about 4 or 5 minutes. Do them in batches.
I like to put them in an egg wash then into some seasoned flour. Let them sit at room temp. until you're ready to fry them.
Try 1/2 cup flour + 1/2 cornstarch. A little bit of baking soda will give them some crumbly batter too.
Drain on paper towels.

I prefer no batter. Wash the wings, separate into two pieces and remove the tips. Season liberally with Tony's and put aside for 15 to 30 minutes.
Bring a few inches of oil to 360 degrees.
In a medium boiler, melt 1.5 to two sticks of unsalted butter and add one bottle exact of Crystal and Trappey's Red Bull, along with 1/4 to 1/2 cup Tabasco and 1/2 t. garlic powder.whisk together.
Fry wings in batches until golden and floating. Then remove with a slotted spoon and place directly in the sauce and coat well. Serve immediately. Damn good,

I'm bookmarking this. Bonus is that you don't stink up the entire house and then have to deal with the oil for an order of chicken wings.
