Chicken and waffle recipe??

Looking at ideas for our 11AM game Saturday. Friends coming over. In addition to mimosas and bloodies thinking about cooking some deer sausage. Also craving chicken and waffles.
Waffles are a breeze. More concerned about the chicken.
I've got a deep fryer and was thinking about frying up some boneless thighs. I've also seen where people flatten chicken breasts before frying. Open to any ideas.
Also taking suggestions for a spicy syrup to go on top.

How about a pepper jelly vinaigrette? I'm ashamed to say I used it on frozen chicken tenders and canned biscuits, but it was good!

I don’t flatten thighs
I like a wet batter of a few beaten eggs and some buttermilk
Seasoned AP flour with a dash of baking soda and baking powder for the dry
I’ll marinate the thighs with whatever flavor profile I’m going for. However long you can for no more that 24 hours
When I go to fry I want cold chicken and cold batter. Thighs into the wet mix then the dry. If I have time illl let them just chill like that in the fridge for an hour or two. Key is for it to be cold, it’ll keep your breading from falling off. Fry em at 340, probably 8 minutes. I will temp fat part of the thigh looking for 165 internal

Cut the thighs into some smaller more manageable pieces and serve on small waffles. If its for a game people would rather be able to just grab one and go than eat off a plate with fork and knives.
I recommend something like this:
You can buy the mini eggo waffles and fry your own pieces of chicken (make them a tad salty for savory flavor after being mixed with the waffle and syrup).Then just stick a toothpick through them to hold together. Or, if you are not a fan of premade waffles, just make your own waffles and cut them into a few pieces.

good call on making them bite-sized. think i'll try that. probably will cut up the waffles i make.

Your dip sounds good. Might also consider mixing some honey with and equal amount of Zataran's Creole mustard. They go together really well. Plenty spicy enough for me, but you can add a dash or two of LA Gold if you like.

Ended up great
The star was the syrup
1 cup pancake syrup
1/4 cup woodford reserve
Bring to boil
1/2 stick of butter added about a quarter of it at a time while simmering
1/4 teaspoon cayenne
