Chicken and Dumplings...damn good.

Cooked up a big pot of chicken hips and dumplings. Will do a pone of cornbread later and pig out.

Chicken and dumplings is way better with torn apart biscuit dough versus the noodle style dumplings some people use

My mom always used the rolled out bisquick dough cut with a pizza cutter method for dumplings.
So that is how it should always be done.

I loved my grandma's chicken and dumplings. She always served them on Sundays after church.

I roll the biscuits into long thin snakes then cut it into little 1/2 inch pillows and drop it into the buttery boiling broth and it's omg delicious.

I cheat and use Mary Hill frozen dumplings. It is a total pain to make dumplings from scratch.
Cliff notes of how I cook dumplings. No written recipe, just from memory of watching my mom way back when. Of course she boiled a farm raised "hen" to make real broth/stock and made dumplings from scratch.
* ~ 2.5 - 3 pounds of boneless thighs (I cut them in 2" x 2" or so pieces)
* Cook down ~ a cup of trinity mix in some butter
* Add chicken to pot along with chick broth and chicken stock (I use reduced sodium)
* Boil chicken until fully cooked (30 - 45 minutes) and easy to pull apart or shred if that's how you like it.
* Add 2 cans of reduced sodium cream of chicken soup.
* Add ~ 1.5 cups of milk
* Season to taste (poultry seasoning, black pepper, salt if needed, etc.)
* Bring to a good boil and start adding the dumplings. I break them into two pieces.
* Reduce heat and cook until dumplings are fully cooked.
* Stir carefully so that dumplings do not break into small pieces and make sure they do not stick to the bottom and burn.
* As the dumplings cook they will use up the liquid, may need to add more broth/stock or water.

Agreed. Though to be honest I haven’t had dumplings with biscuits before and I’m sure I would eat it just fine.
This thread motivated me to make some dumplings this weekend. Such good comfort food!

I feel the same. Even though I said no trinity, I'm sure I'd like it.
It all comes down to wanting chicken and dumplings the way your momma made them!
