I have many knives, a lot of the ones mentioned, but I always reach for my chef knife made by Jamison. Have used it heavy for years and haven’t even brought it in to get sharpened yet. Made in Oregon.

I had Wustof and the wife had Shun when we married. Also have a Global, Chroma 301, and New West. I use the Global daily, I like it's lightweight ergonomics. New West are fine arse knives, and well made. If I have to cut up a ton of veggies and meat for a gumbo or something, I use the new west or shun bc they're the sharpest and cause less fatigue. Rarely touch the Wustof anymore unless I'm breaking down something big and tough.

I decided to go with a Shun. Some of the recommendations on here looked awesome, but I wanted to be able to see some of my choices in person and feel them out.

But now I fear I’m going to get a kitchen knife addiction.

I got this for my step mom last Christmas. She loves it. Was a little scared of it for a while, but once she started using it she saw the light.

Actually got it on this same recommendation. Thanks for that!

If you want a gyuto or Japanese style knives…

Chefknivestogo is a good place and source of info. I have a couple from there and love them.

Hard to go wrong with Shun or getting to feel a knife before buying.

That said, we have 5 or 6 Shuns plus a couple others. They all serve different purposes and the knife rack is full so that scratch has been itched. There's no more knife shopping allowed in our house (for now).

Might want to consider MAC. Japanese steel, but a variety of styles. Wide range of prices as well. Very popular in kitchens.
