Chef knife recommendations / collections

I’m building out a knife roll and looking for recommendations. Honestly I was big leagues at a cook off and now I’ve got an envie for knives.
I started with a few Victorinox fibrox (8” chef, 6” chef, 10” slicer rosewood handle)and just added a Miyabi stainless 8”.
I was thinking a Santoku next. Does anyone have a carbon blade to recommend? Sur la table is having a big knife sale.
Also, I’m looking for a nice pair of shears! There are a handful of knife forums out there but you they are well out of my price range for what they consider “good”.

There is a forum on this site that will answer just about any questions you have. Most of the folks are actual chefs.

Don't have much to contribute other than my best knives are my cheap Dexter boning knife, Mercer slicing knife, and a pair of Home Depot garden shears dedicated for my kitchen.
Will probably be upgrading my daily chef knife and some others soon though.

I love my Shun. I've had them for nearly 10 years now, and I just had them sharpened for the first time last year. They probably needed it a year or two sooner, but they still performed very well even when dull by their standards. The weight and feel are great, and they cut through just about anything.

I have a set of Shun and they're great but my Yoshihiro is my favorite knife by far.

Mailed them to shun. I think it's located in Canada. Google shun sharpening and it should take you to their website.
