ceramic smoker vs. electric

I have always used ceramic and been happy. I got an electric smoker recently and tried it out a few times. Maybe I am doing it wrong bc I have no knowledge on them, but is it possible to get bark on an electric smoker? I did a pulled pork and had two issues. One was my fault bc I had to pull it ealry at 191 degrees. I would have preferred to wait till 195 and bc of that it wasn't as tender as it should have been in my opinion. But also seemed like very little to no bark. Good smoke flavor overall though.

I don't ever see a lot of smoke coming out of the vent. and it has a wood tray that I can add to without opening up door but it seems to me like the old wood chips never get fully used up. Is that a common theme on electric units? It's a masterbuilt John McLemore series fwiw. Could be user error, and if so I am open to suggestions. TIA

This has been discussed on this board many many times and the answer is yes. That being said, all "electric" smokers are different. I consider pellet grills to be electric, because you plug them in, and we all generally get great bark.

Also, on the pork butt, I go to at least 200.

I used an MES for several years until just recently I switched over to an Oklahoma Joe Bronco.

To answer your question though, yes, bark is absolutely possible. What you will likely never get is a smoke ring.

I have had my MES for a while now. I would recommend getting one of the A-Maz-N tubes for it. They generate a lot more smoke and you will not have to add wood chips every 45min or so like I felt like I was doing before.

This is not true. Lots of examples of big smoke rings from those of us using pellet grills.

I was talking specifically about the MES.

I've gotten a decent bark on briskets, but not quite like what you get with a charcoal smoker. Do yourself a favor and get the cold smoker attachment so you don't have to add chips every hour. It doesn't work quite as well with pellets- they tend to get stuck, but it's great with chips. Get 6-7 hours of good smoke.

This, the MES chip smoking blows arse. Switch to an AMNPS.

Looks awesome. So I have never heard of these amazen tubes Before starting this thread. Where do you place this when smoking, also can I use wood chips instead of pellets?

And do y’all use the wood chip tray too and are you supposed to leave the chip loader pushed all the way in or leave it sticking out a little?

This is the bark on the last brisket I did on my Masterbuilt Electric Smoker.

I also recommend the cold smoker attachment. I love mine.

Thx. So bark is def not a problem with the master built it was user error. I figured that may be the case.

So one last question, I’ve googled both Amazen tubes and the cold smoker attachment. Watched a few videos on each. Do you need both? They seem to both do the same thing.

Cold smoker requires its own electricity and is over $100.

Amazn tray is considerably less expensive.

Don’t need both.

Yeah it's either/or. I got the cold smoker attachment because it seemed a little easier, but I'm also lazy

There's a small drawer at the base of the attachment, and I crack it open about 1/4 of the way and point a fan into it- I think it helps circulate the smoke better.

That's because you are making charcoal out of the wood chips. To "use it up" at this point will require more oxygen than you've been feeding it and will more than likely cause a flame and your temps to spike. Dump your newly made charcoal and add more chips to get more smoke.
