Try Guidry's. You can get it in 10lb (i think)boxes at most of your local grocery stores.
It comes frozen but trust me, it is really good.

Most frozen catfish fillets come in 15 pound cases.

They really have a quality product. I fried some last weekend and was pleasantly surprised.

So, I'm somewhat perplexed with the mustard bath before frying. Any tips?

There was a thread about this not too long ago (started on the OT & got moved to F & D). LINK
When I do it, I just add some to the eggwash (egg & milk). Not a whole lot, just enough to give it some extra flavor. I did some shortly after the above thread & it came out really tasty--even my brother, who hates catfish, raved over it.

If you like smaller fillets, try Heads and Tails. 4.99/lb.

George's on highland has some of the best catfish with HUGE servings. You get about 15 thin pieces for 9.99

Guidry's does put out a very good product and they are located around Lafayette also. They do buy a lot of their catfish in Mississippi though and process it at their main place.
