Can salami be kept at room temp?

The bag says refrigerate after opening but why? Can’t dry cured salami sit at room temp for a few days? It is sold room temp so what happens after the bag is opened?

Leave it out baw, thats just to cover their arse. Even yellow mustard says refrigerate after opening.

Dry cured salami can be kept at room temperature. They suggest refrigerating after opening for quality purposes.
When you open the bag, you introduce it to a new environment full of bacteria which may cause it to spoil faster. The above post is correct, it’s more a cover the arse thing than anything.

The bag is full of nitrogen, when you open it you introduce oxygen and it will spoil faster, the fat will turn rancid. OK at room temp for couple of days but any longer you should refrigerate it.
