If the betta chedda was too sharp for you, that's all the more reason to make it yourself. Just use a milder white cheddar and you add a bit more mayo/cream cheese to cut it. I'm a sharp cheese lover, so I really enjoy it.

I've had people tell me my Chicken Salad tastes a lot like Calvin's. I don't know if it does or doesn't since I've never eaten theirs.
I don't measure anything so I just can give you what I use.
deboned chicken (after deboning I run it through the food processor a couple of turns.
Mayo (I use blue plate or Helmons) I add to I get the consistence I like not dry but not to creamy
Celery finely chopped (about 4 or 5 stalks)
Mustard (just a little) add as you like it
Tony's seasoning
Garlic powder
Celery salt

FYI, I ran out of the Swanson seasoning mix (& it's not made anymore) but I found a replacement.
HEB grocery has a "house brand" of chicken salad seasoning mix which is very similar/identical.
HEB also offers the "Ceaser" chicken salad seasoning mix (Swanson did/does too) I haven't tried that..
Give it a try.

Well we've had this discussion about Swanson not making it and someone posted a couple of years ago a press release or something of that nature but I still find it from time to time at Calandros. Not often and when I do I get a few packs but it's still out there.
Wish I had the HEB option.

More for my own documentation, but here's what I tried today...
Results: Pretty tasty, but far from the goal of simulating Calvins. Too oniony, more mayo than the subject goal. So far, eaten on Towne House crackers, with tea.
I still don't have a food processor, and I really see the value of it now... will pick one up, or let my wife buy me one for Christmas.
12.5 oz of Tyson premium white chunks chicken
Blue Plate mayonaise
1/2 packet of Ranch dressing/dip mix
1-2 tbs of Guidrys Creole mix (yellow onions, bell pepper, celery, green onions, parsley, garlic)
dash of garlic powder
dash of Tony's
black pepper
I know this isn't exact to what you suggested, but it's what I had available. Will continue the adjustments.
