Butter Chicken (with pics)

Tonight I decided to tackle Butter Chicken. It's made at a little place called Trattoria Sostanza in Florence and has been called the best chicken dish in the world. Unfortunately we were in Florence in August of 2015 and many places, including this restaurant, close during the month of August.
However, I found some recipes that attempt to recreate it and they're all very similar so I gave it a shot.
It was made with sauteed mushrooms and roasted brussel sprouts.
Raw ingredients
Brussel sprouts with salt, pepper and olive oil
Salted, peppered and floured chicken
And LOTS of butter
The chicken cooks skin side down (unfortunately all I could get at my grocery was skinless) for 10-12 minutes. After five minutes you add more butter. Then you flip the chicken it goes into the oven for 10 minutes and you add even more butter before it goes in the oven. When it comes out of the oven you add more butter and cook it an additional 5 minutes. It may be the juiciest chicken I've ever tasted and was very good but I'm sure it's nowhere close to what Trattoria Sostanza serves.

I assume I can omit the flour?

I guess you could. Gluten problems? You could substitute rice flour to make it gluten free.

In sticks of butter I'd say about a stick and a quarter to a stick and a half. The recipe called for 500 mg of butter.

F'n Italians. We have Comecer equipment and have to deal with their shitty work schedules to come fix their shitty equipment.

Low carb diet. But high in fat so this would be nice without the flour

I'm sure it's fabulous but if I'm dropping that many calories on dinner, it ain't gonna be on baked chicken.

How many calories do you think the meal is? A stick of butter is 810 calories and most of it is left in the pan. The Brussel sprouts are roasted and the mushrooms are sautéed. With the exception of a little flour it's almost a zero carb meal.

500 mg, or 500 gms? 500 mg is a tiny amount. 500 grams, on the other hand is a little over a pound.

My bad. 500 grams. I didn't use nearly that much. I was afraid.
