I pre-fried the rice because that’s the common ingredient, but everything else, build your bowl, bring it to me, and I make it.

The ingredients:
Shrimp
Pork belly
Peas
Carrots
Bean sprouts
Water chestnuts
Green onion
Yellow onion
Mushroom
Bell pepper
Eggs or egg whites
Different sauces (during/post cooking)

Adding some kimchi and sriracha to the fried rice is a game changer.

Pretty simple, add cold cook rice, soy sauce, etc, spread out in thin layer over med-low heat, turn every few minutes until the rice starts to brown.
Search “fried rice blackstone” on YouTube. There’s a ton of videos

Since I’ve got it from you, I’ve used it at least twice a week. Late last night (11pm), I’m outside Making three egg Mitchell’s, to feed the gang of teenagers and Ms Antiquetiger a midnight breakfast.

You crack open that Weller’s I gave you yet?

I heated/browned all the rice with soy and sesame oil and placed on side of the griddle to warm. When someone brought me a bowl of their ingredients, I would cook it for a few minutes, then mix with rice, and then cook the egg (mixing it in right at the end).

how hot do these things get? Would it be an appropriate surface to get a good sear on a steak for, lets say, the reverse sear method?

They can sear. But don't expect cast iron over a chimney full of coals type sear.
