Brining Chicken

Today, I brined cut up chicken for four hours in a simple solution, grilled it and fed it to my family, plus one.
Collectively, they raved that it was the best chicken they ever had. "Why, all of the sudden are you grilling awesome chicken?"
Rewind a year ago, I told them I was brining the chicken, explained the basic chemistry behind it, and the kids were all "heck with you, Walter White. I'm not eating chemicals."
Moral of the story: I'm not sure. But in this case, presenting them the food, and not the method to prepare it seemed to help.
I am angling toward a sous vide setup, and I think I may have to go the same route. If I explain it in advance, I'll likely not get anywehre.

My mother, grandmother and my wife’s grandmother cut up whole chickens, brined in salt water for a couple hours or so then fried the best old country fried chicken you ever ate.
They were brining way before brining was cool. And it makes a big difference. I wet brine but a lot on here dry brine. Either way it makes the chicken much better no matter how you cook it.
And of the three above I can say I never once saw them buy chicken parts. Only whole chickens and cut them up themselves. And the grandmothers had yard chickens for a long time.

Did they fry them in lard or Crisco? Sure makes the skin crunchy. My grandmas and former MIL all dry brined and never, ever bought anything but whole chickens. I was too young to remember the neck wringing and feathers flying that I heard used to happen in the backyard.

Brining chicken is the best. I don’t cook chickens whole anymore just because I like all the skin to stay crispy and whole chickens get soggy quick.
I brine pieces a lot but my favorite is to spatchcock it, brine it, rub some garlic rosemary butter under the skin, and season with salt and pepper.

Yup. I never grill or smoke chicken without brining first.
I do the same with Turkey for thanksgiving.

I go simple. Half cup of brown sugar, a half cup of salt, and 2-3 quarts of crushed ice per half gallon of water. I like to use about half the water weight in ice because it makes sure that I'm not making a nice warm bath for bacteria to grow in. Some people like to add herbs and spices to their brine, but I prefer to do the flavoring later and just want the brine to do its 'make the chicken juicy and tender' thing.

Stir in boiling water from the kettle, let it cool. Add chicken and enough water to cover it in a large Tupperware bowl with lid. Put it in the fridge til I’m ready. Usually 8 ish hours or so.
