The Alton Brown method is really the only way to go. IMO, once you fully try his brine/roast method, you'll never do anything else (even fry).

We have dry brined and smoked our turkeys for as long as I have been alive. Never knew it was called dry brining though. My mom has a secret mix that she rubs everywhere on the turkey about three days before we smoke it. Always moist and flavorful if we don't let the temp get too wild.

If you're going to inject, should you inject the night before, the morning of, or just before putting the turkey in the oven for a dinner Thanksgiving meal?

1 lb of kosher or pickling salt to 1 lb dark brown sugar. It's also an Alton Brown recipe. Well, link below.

I found a brine recipe that I like and it calls for either apple juice or cider, any preference?
Also, I'm roasting it and was thinking of either using the apple juice/cider to baste with or a apple/chicken stock mix, anyone ever tried this?
