Breakfast Burrito ingredient ideas

I got volunteered to cook breakfast burritos for a family gathering... I was looking for suggestions outside of a standard bacon/egg and sausage/egg... thanks in advance

Potato cubes, well seasoned, and egg
Chorizo and egg

If you want to keep it basic, breakfast sausage, scrambled eggs and cheddar cheese. Salsa on the side.

When we go on family vacation I use the above ingredients and just fold them into tacos, but them in the oven on about 150, wrap them in foil and everyone grabs them when they wake up. I’ve made burritos a few times with larger tortillas and add hash browns.

I like the idea of making them in bulk early and keeping them warm.. Thanks!! Question about the boudin suggestions, would you bake it then crumble or would you crumble first and brown in pan like ground sausage?

I would warm it, then squeeze it out of the casing. You don't want it to get dry.

My favorite has always been chicken Tinga.
Eggs, chicken Tinga and some salsa Verde I could eat five or six of them things back in the day.

You want non-standard? Finely dice up some ghost peppers, seeds, membrane and all and mix it in with whatever meat you are using.

Cook JimmyDean Sausage. Add Rotel Tomatoes. Jalapeños Optional, Add Shredded Cheese
Cook Scrambled eggs separately.
Add Scrambled eggs to Sausage/Rotel/Cheese.

Spoon onto heated tortillas.
Easy and Great.

Take the boudin out the case and pan fry it like a hash. Top with eggs cheese and hot sauce.

Only do it to a few of them though. Then everyone can argue, "mine wasn't hot?"

Tater tots make a great potato option due to their small cylindrical shape. Add in eggs cooked with green bell pepper and onion, steak strips, and your preferred cheese and you have yourself a cheese-steak breakfast burrito.

An unusual ingredient might be grits, cook the grits a day ahead and cool them overnight. Add grit cubes to the burrito before heating it up so they stay together. Once warmed they will retain their soft texture. Flavor the grits however you like. I'd go with bacon and white cheddar grits, eggs, cajun chicken tenders.
