Boudin balls - Round 2!!

Good afternoon all! Last year I started a topic about where I can get the best boudin balls, and have them shipped to Ohio. It was my first annual Louisiana Seafood and College Football Saturday Celebration! I would have called it an LSU celebration, but nobody would have came!!

It was only a small get together of around 15-20 people, none of which had ever eaten boudin. Everyone had a great time and all have been hoping that I will do it again this year! And although they were all a bunch of Yankees, everyone of them LOVED the food. Especially the boudin!! They shared the experience with other friends of theirs and those friends all said "can I come with you next year?" So, the 2nd annual party was looking to be a go at that time last year (for this year) with increased numbers expected! I couldn't have been more happy about the feedback and the growing numbers was exactly what I hoped would happen!! I wanted to bring them a part of Louisiana!! Most of them have contacted me asking if and when the "annual" party is going to happen this year.

Well, it was my intention to have this get together for many years to come. However, my health has taken a turn for the worse. To make a long story short (which is impossible), I was diagnosed with having a Chiari Malformatiom type 1 back in June of 2015. Yeah, I know... What the hell is a Chiari malformation right??! I had never heard of it either. Nor my father who is a doctor and my mother who is a nurse. So in a nut shell, a Chiari malformation is when you're cerebellum tonsils (the lower back of the brain) hangs out from underneath the skull and sort of wraps itself around the spinal cord. This cuts off the spinal cord fluid from moving in and out of the brain. Some people can have no symptoms at all. However, many people (including myself) can have devastating symptoms with excruciating pain over nearly your entire body. I had to have brain surgery in sept of 2015, but it didn't work. I had to have a second brain surgery in Sept of 2016, and although I have relief from some symptoms, I still have many others and even added a few. I'm worse now than last year when I had the party last year. Today, I have lost my job, my income and many other important things in life because of this giant beast called Chiari that most of the world has never heard of.

So this is a food and drink board, so I'll quit with the medical stuff. The reason for mentioning it though, was because of a completely awesome act of kindness. I'm not able to get around much these days, and I spend most of my time at home. My friends who were at the get together last year not only called to ask if I'm having the party, but want to pay for the entire event and help me as much as possible! Together, we are going to make a very small start to bring awareness to the general public about this giant beast called a Chiari malformation! First off though, anyone who attends must bring food and/or water to ship to those in need who have been destroyed by Irma and Maria. Secondly, cash donations will be made to start an awareness program for Chiari! Yes, I have incredible friends who remind me daily to not lose my faith in Christ, which at times over the last five years was a real possibility.

Well, if anyone has gotten this far, maybe you could help me as well! Last year I ended up ordering some boudin balls, stuffed catfish and some breaded catfish strips from The Louisiana Crawfish Compamy (Lacrawfish.com). The food was good, but not nearly as good as I have had in the past. But I will send out props to this company. I received plain catfish strips instead of the breaded strips I had ordered. It was nearly 6:00 Pm eastern time when I called them to say they did not give me the correct order. It really wasn't a huge deal bc I prefer my own breading. I simply just wanted to try theirs. Not only did they send the correct fish that day, but I received it by 10:00 AM the next day (party started at 1:00!!). And get this, they double my original order with no additional charge just to say they were sorry for the mix up!! Just wanted to throw that out there! That's good business and I have ordered from them several times since.

Ok, so with all that being said, where can I get the best boudin balls in Louisiana that can ship them overnight to Ohio? I'm going to have a sack of crawfish and of course some catfish sent as well, so if you want to include that in your suggestions, I would greatly appreciate it!!

Wow that's a lot of words to ask about boudin balls. Just order some boudin and make your own, get your friends involved in the process.

Check with Billys and Best Stop in Scott, LA. There are a lot of great places and those are the first that come to mind for me.

Tor's suggestion about making some is a cool idea as well. Maybe have a contest on whose is the best.

Just checked with my wife. My MIL was recently diagnosed with the same condition, just a different type I believe. I thought I had heard the name before. She has yet to have surgery for it. Still have more tests, etc. to run.

Thanks for responding! I was 44 when I was diagnosed and I, nor anyone else I know had heard of it. It happens more often in children. Adult Chiari is a bit more rare. About 1 in 100,000 people will have it. I wish your MIL well. Unfortunately, if it's different to mine, it can in many cases involve the spine which obviously iis something you don't want. Done want to ruin the Food and Drink forum with medical talk anymore than I already have, but I'm happy to be a source of good information for you MIL if needed.

what I would do is order boudin in the link and fry the balls at home

remove casing
form into balls
roll in flour, then egg, then bread crumbs or panko
fry till GB&D

OhioTiger, best of luck to you in your treatment.

Getting back to your efforts to take boudin to the next level, may I suggest something that I once had at Morel's restaurant in New Roads, LA: spicy orange marmalade dipping sauce.

The basis is the fact that fruit goes well with pork, which of course is the core ingredient of boudin. The magic of Morel's sauce wasn't about icky-sweetness or burn-your-face-off hotness, just a big-time orange flavor mixed with a "hmm, this has a kick", possibly from some added chopped jalapenos. I want to recall it was pureed and cooked down a bit.

A simple "cheat" may be as simple as some Tiger Sauce served on the side -- with an appropriate warning for your mid-Ohio friends, hah.

An Internet search for "boudin dipping sauce" returns many different ideas. Get in the kitchen with some pulled pork and start experimenting with what goes well with it and what you like.

Have you tried the pepperjack stuffed boudin balls? I don't think I've met anyone who didnt like them.

Billy's or Best Stop boudin and like others have said make your own balls. Hope you do better with your treatment. Wright State Raiders fan here.

I use pepper jelly for dipping
heat it up to melt it and put in a ramekin

Thank you! Actually, I want to thank all of you for a taking some time out of your day to respond to my post. I greatly appreciate it! Great ideas for making the balls myself, and the dipping sauces! Although I have lived most of my life in Ohio, I'm a Louisianian at heart! My parents were born and raised in south Louisiana, and all of my extended family is still there. I grew up with the most amazing cook ever (my mother of course!)! She's been in the process of making me a cook book with all of her recipes in it for several years now! As you all know though, a recipe is just a recipe. It's the chef that makes the food great! She's never done boudin though! Well, thanks again so much, and Geaux Tigers!

I will throw in Karchner's in Krotz Springs and Juneau's in Marksville. Both have really good boudin. You must try some smoked boudin as well.
You can make boudin wraps at home too. Get some egg roll wrappers and stuff with boudin and some pepperjack cheese, fry to golden brown.
