Boneless dove breast gravy recipe?

Got the 1/2 breasts of 15 doves. And the breast plates that I could boil down for a stock. Whatcha think?

Brown a pound of good smoked link sausage and remove from the pot.

Season the breast meat and brown it well. Then remove from the pot.

Add 1 or two diced onions. Brown very well. Add a little garlic.

Add the meat and sausage back.

Slowly add stock you made from the dove bones, and maybe some chicken stock, about 1/2 to 3/4 cup at a time. Add stock, stir a bit...reduce...add more. Build the gravy. Season. Make rice.

I personally would also add mushrooms, and a little green onion and flat leaf parsley at the end.

I would do exactly what you said except just use chicken stock completely . I’m not wasting a lot of time boiling a dozen dove breast plates to extract a flavored stock.

I Ike doves in a gravy better than any other way.

That sounds outstanding. And maybe I’m showing my ignorance here, but doesn’t the gravy need a starch?

Haha. Depends on the style of gravy you wish. What I posted is a coonass gravy that has no starch. The onions will actually thicken the gravy a little if you go low and slow long enough when you build it. Otherwise, flour the doves before you brown or make a little roux.

Chicken stick has so much damn sodium....and wild game stick like dove is truly a great way to make the gravy

You dont need the sausage to brown the doves. You just brown the shite out of them for 45 minutes and then pull them out and add your onions. Once those are brown, add bell pepper and garlic, then add the birds back in along with your sodium free/lite chicken stock.

The good smoked sausage adds flavor. Not a must, but it makes a fine dish.


You really gonna sear deboned dove breasts for 45 frickin minutes...really? Smh

Maybe if your doves are pigeons. And even still I'd cut it back to 20 minutes.

Well a chicken stock has as much sodium as I put in it since rarely do I use store bought.

And the dove gravy would have just as much since I'm a fan of salt.
