Salt is a flavor enhancer and I've always thought of the seasonings in crawfish boil water as additional enhancers. I don't like crawfish to be so pepper hot that I can't taste the crawfish meat. I like the taste of crawfish/crab boil.
I just never thought of using a dip for boiled crawfish before I first saw it, though I've tried some when a dip is put out. Melted butter is okay, but I don't take the time to dip when I'm eating them.
Packaged crawfish tails are a different story. I bury them in etouffee, cardinale, pie etc... I can still taste the crawfish flavor, but they're not highly seasoned. I guess there's not much difference in cooking them that way than dipping them in mayo, though the flavor of those dishes is so different from well seasoned crawfish tails from a boil.
I don't dip boiled shrimp very often either. Depends on the flavor of the shrimp, seasoning and size of the shrimp. I might dip an end piece of one in a cocktail sauce, melted lemon butter or something else, but not too much if they are well seasoned. On the other hand, I fry them and put them in other dishes, too.
I don't think it's a big deal if some folks prefer to use a dip for boiled crawfish. It's fine with me and I'll gladly make up some dip if someone wants it. I don't see what the big deal is about it.

My wife is f/ Houma, her whole family eats crawfish w/ dip. If I'm boiling I buy a bottle of Wow Wee for them to use. I dip my potatoes, that's about it

Dude why are you so hung up on this? Coonasses don't eat fukin French fries on bread. Probably because it's disgusting. Secondly no one on the bayou gives a rat's arse about the culinary history of new Orleans. So excuse me if the idea of a potato-on-bread poboy never made it down here.

I purchase some nice, but not awesome crab cakes and am looking for a dip other than remoulade dressing for them....No way would I dip boiled crawfish.
Any suggestions?
